Directions:

Lightly beat eggs, salt and pepper. Heat 2 Tbsp oil in wok or frying pan. When oil is hot add eggs. Cook, stirring, until scrambled. Remove eggs, set aside and wipe out pan. Add 2 Tbsp oil. Add the rice. Stir-fry for a few minutes. Stir in the soy or oyster sauce. When the rice is hot, return the eggs to the pan and add chives. For variety add other cooked vegetable, meat, poultry or shrimp.

Ingredients:

  • 1/3 c garlic chives, chopped
  • 2 large eggs
  • 1 tsp salt
  • Pepper to taste
  • 4 Tbsp sesame or vegetable oil
  • 4 c cold cooked rice
  • 1-2 Tbsp light soy sauce or oyster sauce
  • 1-2 c diced cooked vegetables
