Cheese Dip


Heat the oil in a pan and saute the minced garlic, push aside. Add onions and cook until soft. Add the chopped green pepper and banana peppers. When banana peppers start to soften, add tomatoes. Cook until soft. Add pimiento, garlic, oil and Velveeta. Cook over very low heat until cheese is melted, stirring frequently. Serve warm with chips, crackers or tortilla chips.


  • 2 tsp vegetable oil
  • 2 med onions, finely chopped
  • 2 green bell peppers, chopped
  • 3 tomatoes, coarsely chopped
  • 2 cloves garlic, finely minced
  • 2 banana peppers, chopped
  • 1 can pimento, finely chopped
  • 2 lb Velveeta cheese, cubed
