Directions:
Combine fennel, radishes, carrot, onion, parsley and vinegar in a large bowl. Drizzle with a little olive oil and toss to coat. Season with oregano, salt and pepper to taste and serve.

- 1 fennel bulb, halved and thinly sliced
- 1 bunch radishes, trimmed and quartered
- 1 large carrot, sliced
- 1/2 red onion, thinly sliced
- 2 Tbsp fresh parsley, minced
- 2 Tbsp apple cider vinegar
- Extra-virgin olive oil
- 1 pinch dried oregano
- Salt and pepper to taste
