Preheat oven to 450°F. Prepare 8 12″ squares of foil. In small bowl, combine cilantro,juice, butter and water. Roll corn in mixture to coat. Place each ear on foil and wrap around corn. Place directly on oven rack and roast 35 minutes, turning occasionally until tender.
- 8 ears of corn, fresh or frozen
- 2 Tbsp cilantro, finely chopped
- 2 Tbsp fresh lime juice
- 2 Tbsp butter, melted
- 1 tsp water
