Lemon Thyme-Crusted Beef Rib Roast


Combine paste ingredients. Spread evenly onto beef roast. Place roast in shallow roasting pan, fat side up. Do not add water. Roast uncovered 2 1/2 hours at 350°F or until thermometer reads 150°F for medium. Transfer roast to cutting board; tent loosely with aluminum foil. Let stand 15 to 20 minutes before carving.


  • 1 beef rib roast
  • 3 Tbsp fresh thyme, chopped
  • 2 Tbsp fresh garlic, minced
  • 1 Tbsp lemon peel, freshly grated
  • 1 Tbsp olive oil
  • 2 tsp coarse black pepper
  • 1 tsp salt
  • Optional, 1 tsp cayenne pepper flakes
