Directions:
Boil the water. Pour a small amount into a teapot and swirl to warm the pot. Add 10 mint sprigs, lemon grass and sugar. Add remaining water. Allow to sit for 5 minutes, stirring occasionally. Pour mixture through a strainer. Garnish with remaining mint springs.

- 10 fresh mint sprigs – bruised, plus 4 for garnish
- 6″ length of lemon grass – halved and crushed
- 2 Tbsp sugar
